Alliance Engineering February, 27, 2001 Jay Baker Jay: Thank you for a wonderful time last year. I look forward to working with you again this year for the Alliance Engineering 8th annual crawfish and shrimp boil. I thank you for your prompt response with your quotation and your foresightedness in securing the shrimp required for our event at competitive market price, and subsequently passing the realized saving on to Alliance. Enough cannot be said for your willingness and your team’s ability to adapt to the torrential weather we experienced at our 7th annual event. Through crashes of thunder, horizontal rain, and hair tangling winds, the crawfish, shrimp, and sausage made it from your cooker into the hands of our clientele and guests. All 2500 pounds of product was eagerly consumed last year, and rated by all those I asked as “second to none.” I have no doubt that this year will yield our total satisfaction with the quality of your product and service. Please feel free to use Alliance as a reference when pursuing other potential customers. Well see you again the May.

Dear Jay: I would like to express my thanks to you for another job well done!!! As one of the Event Planners, it is my responsibility to produce first class events. You have repeatedly assisted me in achieving my goal. To date, you have catered three events for me. The first event was held in Houston, Texas to recognize our subs and vendors in that market. It rained the entire time, remember? The small group of 100+ still managed to eat 600lbs. Of crawfish. Wow! I guess the rain was good – no one wanted to leave! The second event was held in Birmingham, Alabama to recognize our subs and vendors that worked with us in our corporate location. This party was a tremendous success! We planned for 300 and approximately 300 turned out. In other words, there were no leftovers! The clean up crew was really disappointed. I have heard numerous compliments on the wonderful food that was served and several have inquired if you be back next year. My response has been, I hope so! The third event was definitely the hardest but, by far the most successful. Hoar Construction, LLC had just completed a Heart Center for the Springhill Hospital in Mobile, Alabama and we wanted to do a Grand Opening for the 1,300 employees of the hospital. The hard part of the planning was the fact that this event took place the day after our party in Birmingham, which meant, driving 250 miles after our party ended at 8:00 pm and getting up the next morning ready to do this again at 11:00 am. But, you pulled the impossible off without even a stumble!!! We fed over 1,300 people in a 2.5 hour time slot. Whew! That is a lot of hungry folks! I am still hearing compliments from those who attended the event. Thank you for going the extra mile (literally, as well) for Hoar Construction. It has been a real pleasure doing business with you. You and your staff do an excellent job of getting the job done and doing it eith professionalism and wioth attention to detail. I hope to do business with you again in the very near future.
